Cooking Class April 2009

Here's the recipe for the Fruit Salsa with Pita Chips that the TAB members made.

Salsa:
4 apples (any variety)
4 kiwis (peeled)
2 quarts of strawberries
1 mango (peeled)
Juice from 2 oranges
2 tbsp sugar
Chop all the fruit into very small pieces and place in a large bowl. Take 2 cups of the chopped fruit and process in a food processor, then add back to the salsa. Zest the oranges and add zest to salsa. Squeeze the juice from oranges into salsa. Sprinkle with sugar and some cinnamon. Stir until well blended.

Spiced Pita Chips:
12 whole grain pita pockets (cut into wedges)
Olive oil
Cinnamon sugar
Directions:
Preheat over to 400 degrees. Place pita wedges on a cookie sheet and brush with olive oil. Sprinkle pitas on one side with cinnamon sugar. Bake for approximately 10 minutes until crisp and lightly browned. Use to dip into the salsa. Enjoy!
